Green Tahini Sauce

minutesThe sauce that lives in my fridge permanently, it makes roasted vegetables taste like they came from your fave restaurant. Very simple ingredients, yet somehow greater than the sum of its parts. Tahini is full of minerals like zinc, copper and magnesium and anti-inflammatory fats which support your nervous and immune systems
Ingredients
½ cup tahini paste
½ cup fresh parsley, stems removed
1-2 garlic cloves, grated*
1 tablespoon lemon juice
½ teaspoon salt
¼ – ½ cup warm water
Directions
- Combine all ingredients in a food processor or small blender and blend until smooth. Enjoy!
- Add water a little at a time, continuing to whisk until you have a creamy pourable sauce.
- Use immediately or store in a glass jar in the fridge for up to 7 days. Bring to room temperature before using and add water to thin if needed. Enjoy!
Notes
- A handful of fresh mint alongside the parsley makes a fresh summer version.
- Use within 5 days, the colour is best on day 1 and 2.
