Chocolate Mocha Protein Packed Mousse
Course: Gluten Free, Dairy Free, Refined Sugar Free, Vegan6
1/2 CupsIngredients
tofu (has to be silken or extra soft) – 600grams (usually about 2 regular blocks)
1 1/4 cup chocolate chips, melted
1/3 cup maple syrup
1 regular (double shot) of espresso (I use decaf) – or about 1/3 cup coffee
2 teaspoons of vanilla
small pinch of salt
Toppings: fresh berries, granola, hemp seeds or whatever toppings you desire!
Directions
- Add all ingredients into a high speed blender or food processor. Blend until it reaches a very smooth consistency.
- Transfer to mason jars or a storage container and chill for 30 mins to set.
- Enjoy! Top with fresh fruit, granola, hemp seeds, or whatever toppings you desire!
