The Besto Pesto

This is the sauce that will make you never want to buy jarred pesto again. The miso is what gives it a umami flavour without the parmasean cheese in regular pesto, plus gives a gut loving boost! 

Ingredients

  • 2 cups of packed basil 

  • 1 cup of kale or spinach, stemmed 

  • 2 tablespoons of almonds 

  • 2 tablespoons of walnuts 

  • 1 tablespoon miso paste 

  • 1-2 garlic cloves 

  • ½ cup olive oil 

  • Pinch of sea salt 

Directions

  • Combine all ingredients in a blender or food processor and puree until smooth, scraping down the sides with a spatula as needed.
  • Use immediately or store in a covered glass jar in the fridge. Enjoy! 

Notes

  • No nuts? Use sunflower seeds instead of almonds and walnuts. Press plastic wrap directly onto the surface to stop it from browning.
