One simple tip to make your back to school mornings easier: meal prepping snacks! And these are a winner that the entire family will adore.

Shoutout to Natures Path Organics for always standing behind Organic + Non GMO ingredients in all their products. I searched long and far for Rice Puffs that wasn’t packed with added sugar, and stayed crispy these are now a staple in our pantry!

And their superfood qi’a topper is great for adding a nutrient dense boost to treats like this; but also to oatmeal, salads, yogurt bowls and more.

This recipe is part of my Feel Good Treats Summer series, where we’re all about enjoying your favorite treats but making them healthier so you feel really freaking good! All the treats are damn delicious and also happen to be gluten-free, dairy-free, refined sugar-free, anti-inflammatory, and mostly vegan.

Almond Caramel Crunch Cups

Ingredients

  • 1 1/3 cup chocolate chips, divided

  • 1/2 cup natural almond butter

  • 1/4 cup maple syrup

  • pinch of salt

  • pinch of cinnamon

  • 1/3 cup roasted almonds, chopped

  • 1/4 cup dates, pitted and chopped.

  • 3/4 cup of Nature’s Path Rice Puffs

  • 1/4 cup Nature’s Path Qia topper

  • Flakey Maldon salt for topping

Directions

  • In a large bowl mix nut butter, maple syrup, salt & cinnamon. Stir to combine.
  • To the bowl, add Rice Puffs, almonds, dates, and Qia topper. Mix until it’s combined.
  • Melt your chocolate. Put a small amount of melted chocolate in the bottom of each muffin tin (lined with parchment paper if it’s not a silicone muffin tin). Set aside the remaining chocolate for the tops.
  • Dollop the mixture into each cup. Gently push down the mixture.
  • Top each muffin cup with the melted chocolate.
  • Sprinkle the top with Flakey Maldon Salt.
  • Put the tray into the freezer until set. Store in fridge freezer for 2 weeks. Enjoy!
