Crunchy Cabbage Salad
Course: Gluten Free, Dairy Free, Refined sugar free4-6
servingsSesame Ginger Dressing
2 tablespoons toasted sesame oil
2 tablespoons olive oil
2 tablespoons rice vinegar
2 tablespoons tamari or soy sauce
1.5 tablespoons pure maple syrup
2 cloves garlic, peeled
1 tablespoons of fresh ginger (about 3 inch chunk), peeled
1 tablespoons tahini or cashew butter
- Salad
4 cups shredded green cabbage
2 cups shredded red cabbage
1/2 cup diced green onion
3/4 cup freshly diced cilantro
1 cup shredded or ribboned carrots
1 red bell pepper, thinly sliced, or chopped
1/2 – 1 jalapeno, seeded and diced
Directions
- Make the dressing by blending all dressing ingredients in a small blender until combined.
- Cut up all veggies and add to a large bowl. Shred the cabbage as thin as you can get it. Use a mandolin if you have one. If you want to ribon your carrots (as seed above), just use a peeler.
- Add ginger sesame chicken (FIND HERE) and top with desired amount of sesame dressing. Enjoy!
