Crunchy Cabbage Salad

Sesame Ginger Dressing

  • 2 tablespoons toasted sesame oil

  • 2 tablespoons olive oil

  • 2 tablespoons rice vinegar

  • 2 tablespoons tamari or soy sauce

  • 1.5 tablespoons pure maple syrup

  • 2 cloves garlic, peeled

  • 1 tablespoons of fresh ginger (about 3 inch chunk), peeled

  • 1 tablespoons tahini or cashew butter

  • Salad
  • 4 cups shredded green cabbage

  • 2 cups shredded red cabbage

  • 1/2 cup diced green onion

  • 3/4 cup freshly diced cilantro

  • 1 cup shredded or ribboned carrots

  • 1 red bell pepper, thinly sliced, or chopped

  • 1/2 – 1 jalapeno, seeded and diced

Directions

  • Make the dressing by blending all dressing ingredients in a small blender until combined.
  • Cut up all veggies and add to a large bowl. Shred the cabbage as thin as you can get it. Use a mandolin if you have one. If you want to ribon your carrots (as seed above), just use a peeler.
  • Add ginger sesame chicken (FIND HERE) and top with desired amount of sesame dressing. Enjoy!
