Hi! Im arianne

Shoutout to Natures Path Organics for always standing behind Organic + Non GMO ingredients. I searched long and far for a crispy rice that was of this quality and also tasted really good and crunchy!

This recipe is part of my Feel Good Treats Summer series, where we’re all about enjoying your favorite treats but making them healthier so you feel really freaking good! All the treats are damn delicious and also happen to be gluten-free, dairy-free, refined sugar-free, anti-inflammatory, and mostly vegan.

I started developing these feel-good treats after being diagnosed with Lyme disease. Check out the story and video here!

Crispy Rice Squares

Ingredients

Directions

  • Line an 8×8 pan with parchment paper. Set aside.
  • In a medium pot add tahini, cashew butter, salt, vanilla, butter (or ghee, or coconut oil). Mix to combine.
  • Add your marshmallows.
  • Cook the mixture over medium heat until it turns into a gooey mess. Do not step away otherwise it will burn. Stir continuously. The dandies marshmallows won’t melt as easily as the old school ones, but they will eventually.
  • Once it’s a melty mess (takes about 5 mins), add it to a large bowl. Immediately add the Crispy Rice Cereal and mix until combined while it’s still warm.
  • Add the mixture to your parchment lined pan and press down. Let it rest for 15 mins to set.
  • Cut into squares and enjoy!
