Nutella lovers, this is for you my friends! Same great taste, except without the inflammatory refined sugar, oils or additives.

This recipe is part of my Feel Good Treats Summer series, where we’re all about enjoying your favorite treats but making them healthier so you feel really freaking good! All the treats are damn delicious and also happen to be gluten-free, dairy-free, refined sugar-free, anti-inflammatory, and mostly vegan. 

I started developing these feel-good treats after being diagnosed with Lyme disease. Check out the story and video here!

Homemade Nutella

Ingredients

  • 2 cups raw or roasted unsalted hazelnuts

  • 3/4 tsp pure vanilla extract

  • 1/2 tsp sea salt

  • 1/2 cup dairy-free dark chocolate, melted

  • 1 tablespoon of maple syrup or raw honey* (optional, see note below)

Directions

  • Preheat your oven to 350 degrees F
  • Add your hazelnuts to a parchment lined baking tray. If they are raw, roast for 10-15 mins. If they are already roasted, roast them again for 5-10 as this will make it easier to remove the skins.
  • Remove from oven and let cool.
  • Transfer to a large kitchen towel and use the towel and your hands to roll the runs around to remove the skins. This doesn’t have to be perfect. Compost the excess skin.
  • To a high speed food processor add hazelnuts and blend until it forms a creamy nut butter. Scrape down the sides as needed.
  • To the food processor, add vanilla, salt, and melted chocolate. Blend until creamy and smooth.
  • **IF you want it to be sweeter you can add some maple or honey, but note that adding a sweetener will cause the mixture to thicken up. It will still be delicious but the texture will change. I personally find it sweet enough without the added honey, since the melted chocolate is sweetened. I like the chocolate brand Enjoy Life.
  • Store in a jar or container for 2-3 weeks at room temperature or the fridge. Enjoy!
