Ingredients

  • This recipe does not have amounts, as it depends on the ingredients you get creative with, how big your clusters are, and how much chocolate you use. 1 cup of chocolate chips to make around 8-10 clusters. This recipe is a great family friendly recipe, or party activity as everyone can make their own unique mountain combination!

  • Dried fruit of choice

  • Nuts of choice, roasted

  • Dairy free dark chocolate chips

  • Flakey sea salt

  • Favourite Combos
  • Dried apricot, pistachio, coconut. 

  • Cashew, dried cherry/blueberry, coconut 

  • Dried fig, walnut, coconut 

  • Goji berry, raisin, almond

  • Cashew, tart cherry, dates, crystalized ginger

Directions

  • If your nuts are raw, roast them: Preheat the oven to 350º F (175º)  and roast them for 3-6 minutes on a parchment lined tray. Frequently shaking them to rotate. PRO TIP Roast your nuts whole, rather than chopped. Chop them after they are roasted and cooled. This will ensure no small burnt bits as the nuts are all uniform sizes. You can also roast them in a medium heat pan, shaking them up every few minutes until they are slightly golden and fragrant. 
  • Create a double boiler by bringing a medium pot filled a little less than halfway with water to a simmer. Place a heatproof bowl that’s just big enough to sit on top of the pot (ensure the bottom of the bowl does not touch the water) and add chocolate chips to the bowl, stirring frequently until fully melted. OR melt in a microwave.
  • Take a few slices of dried fruit, a few nuts and a pinch of coconut and drop it into the melted chocolate. Using two spoons, coat it in chocolate. Remove the cluster of fruit and nuts from the chocolate, letting any excess drip off and drop in a mound onto the parchment covered tray. Use spoons or fingers to press it together if needed. Sprinkle with flakey sea salt (if your nuts are not already salted). Complete all of your creative combinations. Put tray in freezer for 10-20 minutes until the chocolate is set. Enjoy! Store in a covered container in the fridge.
