If a chickpea can be a truffle, you can be anything you want.

And no it doesn’t taste like chickpeas. But it is packed with protein, from the chickpeas and collagen, so it’s a blood sugar balancing treat.

Which means it will leave you satisfied and not in a sugar craze for 8 more and feeling like crap.

Chocolate Truffles (from chickpeas!)

Ingredients

  • Truffles
  • 1 (13.5oz) can of chickpeas, drained and rinsed.

  • 1/2 cup nut or seed butter (I like almond, peanut or cashew butter)

  • 1 cup vegan dark chocolate chips, melted

  • 3 scoops of collagen protein powder (optional)

  • 1 Tablespoon honey (or maple syrup)

  • A pinch of salt

  • 1 tsp of Harmonic Arts 5 mushroom powder * optional

  • Coating
  • 3/4 cup vegan dark chocolate chips, melted

  • 2 Tablespoons coconut oil

  • Flakey maldon salt

  • Optional Level Up
  • Roasted Hazelnut

Directions

  • To a food processor or high speed blender, add chickpeas, nut butter, melted chocolate, salt, collagen, and honey.
  • Blend for about 60 seconds – 5 mins (depending on the strength of your equipment) or until ingredients are well incorporated and smooth.
  • Then, using a cookie scoop or a spoon, scoop the batter onto a baking sheet that is lined with parchment paper or a silicon mat. Don’t worry if they are not perfectly round.
  • Place the balls in the freezer for about 15 minutes to harden. Remove from the freezer and roll the dough into smooth balls. Place back in the freezer for 10 minutes to harden again.
  • Melt the additional dark chocolate for coating. Remove the truffles from the freezer and coat them with the chocolate, and then add a sprinkle of flakey salt on the top.
  • Then place them back onto the baking sheet and then back into the freezer to harden completely.

    Store in the fridge or freezer!

    Want to level up? Add a roasted hazelnut to the middle!
