Servings

servings

Ingredients

  • 1 cup dry oats

  • 1/4 cup raisins

  • 1/4 cup chopped pecans

  • 1/4 cup shredded unsweetened coconut

  • 1/4 cup natural almond butter

  • 1/4 cup honey (or sub maple syrup if vegan)

  • 1/2 teaspoon of cinnamon

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

Directions

  • In a medium bowl combine oats, raisins, chopped pecans and coconut.
  • In a separate medium bowl combine almond butter, honey, cinnamon, vanilla and salt. Stir to combine.

If your honey is firm or crystallized you can combine all ingredients in a small saucepan over low heat and stir frequently until it is melted and combined.
  • Pour the wet ingredients into the dry ingredients and stir well to combine. The mixture should be sticky.
  • Refrigerate for 30 minutes. Scoop by using a spoon or tablespoon (or whichever size of ball you prefer) and roll it in your hands to form a ball. Repeat with remaining mixture. Enjoy!
  • Store the energy balls in the fridge for up to a week or in the freezer for much longer.
